Follow The Directions
Roughly cut all veg and add to a large pot of water along with garlic cloves and 8 mint leaves and cook until all veg is very soft.
When the Veg is cooked, add it to a powerful food processor or bullet blender (which ever can get the mix smoother) along with around 1/2 cup of the water you cooked the veg in, the peeled avocado, garlic powder, cumin, parsley and mint leaves, salt, pepper, lemon juice, moringa powder, coconut milk and veg stock powder, then blitz until super smooth. You may need to do this in two amounts then combine.
Pour back into the pot you cooked the veg in and simmer on a low heat for a further three minutes
Pour into two bowls and top with a drizzle of coconut milk and truffle or olive oil. Serve with a piece of low carb, no flour bread (Aldi sell one or you can make your own).
