ROASTED SWEET POTATO & YELLOW SQUASH WITH CASHEW SAUCE

There is nothing more nourishing and satisfying than a warm plate of roast vegetables. In this recipe we use seven ingredients from the Fit 50, so you can be assured that every bite will provide your body with the building blocks it needs to create healthy cells and boost your immune system. Also your gut will enjoy a meal packed full of fibre, helping your digestive function.

If you cannot find yellow squash, use green zucchinis.

Follow The Directions

Pre heat an oven to 160/320.

Wash sweet potato and prick with a fork and place in a bowl with yellow squash and cherry tomatoes

Add olive oil, paprika, rosemary sprigs, salt and pepper and coat the veg.

Step

Remove the sweet potato and place on a roasting tray and put in the oven and cook for 10 minutes before the other veg is added

Add yellow squash and cherry tomatoes and cook for a further 20 minutes or until all veg is cooked through and browned. You may want to turn veg half way through cooking.

Remove veg and spread on a platter

Sprinkle parsley over the veg and drizzle cashew sauce
