RAW BROCCOLI SALAD

Follow The Directions

Step

1

Cut the broccoli into small florets and place into a bowl

Cut two cheeks off a green apple and finely slice. Add to the bowl

Add one Tablespoon of pumpkin seeds, a handful of finely chopped parsley and break up 25g of the cashews and add to the bowl and set the other 100g aside in a small bowl

Cover the cashews in boiling water for 10 minutes the drain half the water off

Add soaked cashews and half the water to a bullet blender with almond milk, salt and nutritional yeast and blitz until smooth. If the mix is still too thick, ass some more almond milk

Combine the broccoli mix with cashew sauce and mix until coated

Split into two portions, plate and serve. Add a light dusting of ground pepper if desired
