Pancakes are a delicious, decedant breakfast which is not usually associated with health. They are usually made with predominantly flour and sugar, two highly refined carbohydrates which have a host of negative effects on our health.

However, these delicious pancakes have no flour and no sugar and tastes as good, if not better than the traditional recipe. Flour is substituted for nutrient rich almond meal and the sugar is substituted for alkalising stevia, and they taste amazing!

In a high powered blender, crack eggs, add almond or soy milk, vanilla essence and oil and blend until combined.

Then add dry ingredients and blend again until smooth.

Add a little coconut or olive oil to a pan on medium heat and pour in around two Tablespoons of batter per pancake which should be around five inches or 125cm.

Cook for around 60 seconds and then start lifting edges and flip and cook for a further 20-30 seconds and remove.

Serve four pancakes with a tablespoon of organic coconut yoghurt, a dusting of cinnamon, berries and one teaspoon of honey drizzled over.
