Celery

RECOMMENDATION

Great as a snack raw with homemade hummus or cashew spread, in soups or stir-fries.

If you are not eating organic celery, be sure to wash it well before consumption as they do tend to contain some pesticides on the skin surface. Mix 10% white vinegar and 90 percent warm water and soak for around 10 minutes then rub and rinse.

Why Celery is good for us

Why Celery is good for us

Celery contains many antioxidants such as vitamin C, beta carotene, and flavonoids, as well as at least 12 other kinds of antioxidant and nutrients which help protect cells, blood vessels and organs from oxidative damage.

Despite almost containing no calories, one stick of celery contains around 25 anti-inflammatory compounds such as phytonutrients, which have been shown to reduce inflammation in the digestive tract, cells, blood vessels, and organs. This reduction of inflammation is particularly helpful in reducing the negative side-effects of chemo or radiation.

Regular consumption of celery aids in digestion, lowers our body’s acidity and pectin-based polysaccharides in celery, have been shown to decrease instances of stomach ulcers and improve the lining of the stomach.
